In recent years, Liam Callahan has earned growing recognition nationally as one of the new generation of artisan cheese makers. As the cheese maker-owner of Bellwether Farms in Sonoma County, Liam has developed a collection of fresh and aged cheeses that reflect traditional craftsmanship but also give a nod to contemporary culinary trends.

Under Liam’s direction, Bellwether Farms cheeses have won several international, national and regional awards, including the World Cheese Awards and numerous American Cheese Society honors. Having become a favorite of many California chefs, Bellwether’s cheeses are found on the menus of many of the most respected restaurants.
